Celebrate Pi(e) Day

Today, March 14, is known as "Pi" Day. (For those who didn't do well in math... it's because the number for pi is 3.14(plus a lot more numbers)... so March 14, 3-14... Pi Day.)

And of course Pie is much more fun than Pi, so... Here's a pie for pi(e) day! Lemon Cream Pie.

What You Need:
For the Crust:
2 cups flour
1 tsp. salt
2 Tbsp. powdered sugar
1/2 cup shortening
1/2 cup heavy cream
3 Tbsp. butter

For the Lemon Curd Filling:
1-2 Tbsp. Lemon Zest
1/2 cup fresh lemon juice (from 2-4 lemons)
6 egg yolks
3/4 cup sugar
3/4 cup butter (cut into chunks)

For the Whipped Cream Topping:
1 1/2 cups heavy cream
1/4 cup powdered sugar
Optional: 1-2 Tbsp vanilla
