We have a lot of love for Mr. Theodor Geisel in this family.
He is better known as the incomparable author, Dr. Seuss.


Our Dr. Seuss books are all well-loved and very well-worn.
I'm pretty sure that we own every children's story he ever wrote,
including "The Bippolo Seed". Have you heard of that one?

We even dressed as Dr. Seuss characters for Halloween 2010!


 I would say that "Green Eggs and Ham" is probably our favorite Seuss book.
My son has the whole book memorized and will quote from it at random times.
When we go out at night, he starts reciting, "Would you, could you, in the dark?"
and continues with the rest of the book!

We celebrate lots of extra birthdays around here, including Cookie Monster and Beethoven.
So, I made these cupcakes to celebrate Dr. Seuss' birthday on March 2.

Lady Gaga Launches "Born This Way Foundation" To Promote Safety, Skills, and Opportunity for Young People

Today, in collaboration with Harvard University and other partners, Lady Gaga is officially launching her "Born This Way Foundation".  As discussed on this blog, on news outlets, and in the peer reviewed literature, bullying is a serious problem with potential connection to public health issues such as depression and suicide.  Lady Gaga has been a vocal anti-bullying advocate, and in 2011 channeled that energy into the development of a Foundation.  Lady Gaga and her mother Cynthia Germanotta, founded the Born This Way Foundation to foster a more accepting society, where differences are embraced and individuality is celebrated.

The launch is being held at Harvard University’s Sanders Theatre.  Lady Gaga and her mother will be joined on stage by Oprah Winfrey, author and speaker Deepak Chopra, U.S. Secretary of Health and Human Services Kathleen Sebelius, and esteemed Harvard Law School professor Charles Ogletree to discuss the vision of the organization, and how we can all get involved.

An academic symposium has been planned in conjunction with the launch.  The event invites researchers, policymakers, and foundation representatives to discuss ways to reach youth and promote a culture free from bullying.  I'm proud to see that my former employer, the Education Development Center, has been invited to the symposium and will share insights from their extensive research in this area.

I look forward to hearing more about the vision of the organization, because although Lady Gaga is hugely influential (at the time of this post, she had 19,773,280 followers on twitter), the strategies and tangible goals for the Foundation are not completely clear from their website.  Under their mission statement, they list three pillars of the Foundation:
  1. Safety
  2. Skills
  3. Opportunity
There is some discussion under those pillars of offering support to individuals through online communities, providing training in advocacy and community engagement, and providing opportunities to bring the national BTWF activities to the local level.  However, there are no details regarding how these strategies will actually be executed.  If you click on "Do Your Part" and "Review The Plan", it simply takes you back to the mission statement.

What strategies do you think could help BTWF support the three pillars of safety, skills, and opportunity?
What outcomes should they look at in order to evaluate the effectiveness of their efforts?

Super Easy & Cute Cake Pops

I made a rainbow of cake pop colors this week... they're going along with another project that you'll see soon... but I had to share them because they're so easy to decorate! And the sprinkles cover up almost any imperfection.

Misshapen cake ball? No problem Cracked candy coating? No problem. Not smooth finish? No problem!

All you do is cover the cake pop in white candy coating... as I explain in detail here on my How to Make Cake Pops Tutorial.

Then you use sanding sugar to completely cover the cake pops. I needed a third hand, so I didn't get a picture of this step, but I just pour the sprinkles over the pops letting the excess fall into a bowl... then pour it back into the bottle for the next pop.

And voila! It's a rainbow of cake pops. So easy and so pretty!

It has been a long while since I made a loaf of bread. Ever since my bread machine broke down 2, 3 years back, I find it more and more difficult to make bread from scratch. Since I don't have a standing mixer (and no intention to get one), the kneading process although rather therapeutic, will make my arms and shoulders hurt for days. I have been looking around for a replacement, but have no luck as I wouldn't spend more than what I paid for my previous bead maker. It so happened that I manage to get a new machine at about the same price when we were in Beijing last year. The design and functions is just like my previous machine, a very basic and economical machine that is affordable and reliable...well, at least for a couple of years.


Here's my first loaf of bread for the year. I followed the tang zhong method and bread rose high and mighty. It rose more than an inch over the top of the rim of my pullman pan that it couldn't fit into my standard bread loaf air tight container. I can't complaint much since it is really a happy problem for me =)

Do pardon me from bragging, but the loaf was very nicely baked, the crust colour was just right! From the picture above, I hope you could imagine how pillowy-soft and fluffy the bread loaf turn out.

'拉丝' a commonly used term to describe a feathery soft loaf of bread...where the crumbs tears off like strands of silk...


The bread tastes delicious even on its own as it is a sweet bread. It remained soft and light for three days, in fact the loaf was so cottony that I had problem cutting it into slices. It is time I get a new bread knife since I don't know how, or whether it is possible to sharpen a serrated knife?


What better way to eat scoops of ice cream than to sandwich them between a slice of homemade bread! I could almost hear the sounds of bells jingling from the ice cream cart...




Raisin Loaf (tang zhong method)

tang zhong (water-roux):
25g bread flour
125ml water

bread dough:
285g bread flour
15g milk powder
54g caster sugar
4g salt
5g instant yeast
30g egg, lightly beaten (about half an egg)
81g water
90g tang zhong (water-roux)*

30g unsalted butter
60g raisins

Method:
to make tang zhong:
* Place 25g bread flour in a saucepan. Add 125ml water, mix till smooth, making sure there are no lumps of flour. Cook over medium to low heat, stirring constantly with a hand whisk to prevent it from burning. Within 1 to 2 mins, the mixture will start to thicken, stop when you see traces in the mixture for every stir you make with the hand whisk. (Take a look at the video clip here. ) The 65degC tang zhong is ready. Immediately transfer the hot tang zhong into a bowl and cover it with a cling wrap, making sure the cling wrap sticks onto the surface of the mixture. This is to prevent a film from forming on the surface. Leave to cool completely before using it.

to knead dough by bread machine:
* Place water, egg, tang zhong (use 90g), sugar, salt, bread flour, milk powder in the pan of the bread machine (according to the sequence as stated in the instruction manual of your bread machine). Make an indentation on the flour and add in the instant yeast. Select the Dough function of the bread machine and press start. Leave the lid of the machine open (this is to prevent over heating). After about 10mins of kneading, add in the 30g of butter. Let the machine continue to knead the dough. After the kneading cycle has stopped (20mins), Stop and Restart the machine. Continue to let the machine knead for another 20mins. Remove dough from the bread pan.

* Place dough in a lightly greased (use vegetable oil or butter) mixing bowl, cover with cling wrap or a damp cloth and let proof in room temperature (around 28 to 30 degC) for about one hour, or until double in bulk.

* Remove the dough from the bowl and give a few light kneading to press out the gas in the dough. Divide the dough into 2 equal portions. Roll each dough into smooth rounds, cover with a damp cloth or cling wrap and let the doughs rest for 10mins.

* On a lightly floured work surface, flatten each dough and roll out to form a longish oval shape. Starting from the shorter end, roll it up swiss-roll style. Leave the doughs to rest for another 10
mins.

* Flatten each dough and roll it out again to form a long rectangle (around 30cm x 10cm). Flip the dough over and sprinkle the surface with raisins. Roll up swiss-roll style, roll up as tightly as possible. Pinch and seal the seams. Place the 2 doughs, seam side down, against each side of a well greased (with butter) pullman tin.

* Cover with damp cloth or cling wrap and leave doughs to proof for the second time for about 50~60mins, or until the dough rise up almost to the rim of the pan. Bake in preheated oven at 180degC for 30mins. (Note: If necessary, cover the top with foil to prevent over browning). Unmold immediately and leave to cool completely. Once cool, store in an airtight container.

Palatability, Satiety and Calorie Intake

WHS reader Paul Hagerty recently sent me a very interesting paper titled "A Satiety Index of Common Foods", by Dr. SHA Holt and colleagues (1).  This paper quantified how full we feel after eating specific foods.  I've been aware of it for a while, but hadn't read it until recently.  They fed volunteers a variety of commonly eaten foods, each in a 240 calorie portion, and measured how full each food made them feel, and how much they ate at a subsequent meal.  Using the results, they calculated a "satiety index", which represents the fullness per calorie of each food, normalized to white bread (white bread arbitrarily set to SI = 100).  So for example, popcorn has a satiety index of 154, meaning it's more filling than white bread per calorie. 

One of the most interesting aspects of the paper is that the investigators measured a variety of food properties (energy density, fat, starch, sugar, fiber, water content, palatability), and then determined which of them explained the SI values most completely.

Round One Done

Well I guess this is more like round one, take two, but you know what I mean. I got in on time (actually a little early!), got a scan done and then the rads. It was quick and easy. I got scheduled for the rest of the week (and it fits my work schedule - a relief). I am glad to get started and cautiously hopeful that it will work this time.

Twists and Keeping Damage to a Minimum

After 12 years of styling Syd's hair, I've gotten pretty good at minimizing damage as much as possible. However, now that Syd is taking over a lot of the detangling, we're starting to see some damage at the ends. We're definitely going to have to trim the ends very soon to get rid of all that damage.

But that's ok!

We all know that learning to properly care for curly hair takes time. Be careful not to expect too much from your child as she learns to take care of her own hair...I know I did my fair share of damage over the years. But with patience and practice, I have learned several little tips and tricks that help keep damage to a minimum.

This post is going to focus on one of those tips...and here it is: Since we weren't shampooing between styles, we moved from one style to another without a comb touching Syd's hair!

When I took down Syd's latest cornrow style, I removed the cornrows on 1/4 of her hair at a time. After I removed those cornrows, I put that quarter of her hair into one big loose braid to keep it detangled. When I had removed the entire style, we were left with this:


We then focused on one of those sections at a time. I tied three of the braids up out of the way and started with the back left section. I removed that braid and used my fingers to gently detangle the entire section. Remember, I braided this hair immediately after removing the cornrows, so there really weren't any tangles. The best way to keep detangling easy is to prevent the tangles in the first place. This finger detangling was done mostly to remove the loose strands that were shed while her hair had been in the last style.


I decided to start in the very back of Syd's hair, so I used my fingers to separate out a section of hair at Syd's nape. I just clipped the rest up and out of the way for a minute.


Since I like to do twists on hair that is slightly damp, I misted this piece of hair with plain water in a spray bottle. I then added just a bit of styling product, ran my fingers through her hair to distribute the product evenly, and started twisting.

In order to make sure the twists last as long as possible, it's important to twist as tightly as possible. It's tempting to rush it and not twist as tight, but the twists loosen up on their own. If you don't start off with a very tight twist, you will end up with very loose twists that will quickly become frizzy. In the two pictures below, you can see how tightly I twisted this section of hair, and then how it loosened up the minute I let go.

See how it got looser after I let go? It will loosen/plump up even more as it dries completely.
And then I repeated that process 33 more times as I moved through the rest of her hair.




In the end, we have a head full of great looking twists and my fingers were the only tools used. No brush, no comb, no damage. =)

Soda-Free Sunday

Last Thursday, I received a message from a gentleman named Dorsol Plants about a public health campaign here in King County called Soda Free Sunday.  They're asking people to visit www.sodafreesundays.com and make a pledge to go soda-free for one day per week. 

Drinking sugar-sweetened beverages (SSBs), including soda, is one of the worst things you can do for your health.  SSB consumption is probably one of the major contributors to the modern epidemics of obesity and metabolic dysfunction.

I imagine that most WHS readers don't drink SSBs very often if at all, but I'm sure some do.  Whether you want to try drinking fewer SSBs, or just re-affirm an ongoing commitment to avoid them, I encourage you to visit www.sodafreesundays.com and make the pledge.  You can do so even if you're not a resident of King county.
