THANKSGIVING 2013: A VERY GF MEAL

Happy Thanksgiving Canadians!  It was a beautiful sunny long weekend! hope you all had a good break.  For those of you in the States, I know you're looking forward to your Thanksgiving weekend in the near future.  I wish you have a good one too.

I was thinking of making the traditional turkey with moist bread stuffing and I came to the conclusion that it was primarily my hangup about sticking with traditions that keeps me from experimenting with different stuffings.  Bread stuffing is absolutely my favourite part of the Thanksgiving meal (and the leftovers!)  After discovering that free range and/or organic turkeys simply taste better and more "turkey-ish"than butterballs and other generic frozen turkeys, our family hasn't gone back.  We pre-order our turkey every Thanksgiving and Christmas so as not to be disappointed.

As you know, since being diagnosed with Hashimoto's Disease in 2011, I've been converting to a Gluten Free diet.  This has been pretty hard on me during parties and huge feasts where bread products take centre stage.  This year I was going to take the power back.  I decided to stuff my bird with glutinous rice (yah! I know! what a misnomer!) Sweet rice, aka glutinous rice has absolutely no gluten in it.  It's the kind of rice that is used to make "sticky rice", the dish you get at DimSum that's usually wrapped in Lotus Leaves.  Without further ado, here is my day in Vine video clips and pics.  The recipe for the Gluten Free Sticky Rice stuffing is at the bottom of the post.  My recipe.  I made it up along the way, and I believe it's pretty forgiving for modifications and add-ins.



Saturday night, I rinsed that fresh turkey and gave it a good cleaning.  I personally like to pull out any pin feathers that are still remaining in the skin at this point.

I prepared a brine of kosher salt, peppercorns, cloves and water in a clean IKEA bin.  This bin is only ever used for brining.  I don't do anything else with it.  I store the whole shebang in the refrigerator for 8-12 hours (this is good done overnight).  The next morning, I drain everything from the turkey and then dry the bird with a paper towel and then place it in a rack sitting in the roasting pan (uncovered) and allow the bird to dry out in the refrigerator.  A dry skin is a crispy skin!



Along with the brining turkey, I begin my sticky rice stuffing.  I soak dried shitake mushrooms (fresh will do too) in hot water.  I allow this to sit on the counter overnight.

In general, I'm not crazy about dried shitake mushrooms.  I can take 'em or leave 'em.  They are very earthy and lend a smoky woodsy flavour to things.  I used 8 this time.  Next time I'm only going to put 4 shitake mushrooms in the sticky rice stuffing.


On Thanksgiving morning, I prepare the stuffing and cram as much in the body and neck cavity as I can.  The sticky rice stuffing is actually ready to eat after preparation and can be served separately in a casserole dish.  You don't even have to stuff the bird with it at all.  However, imho what's the point if I don't stuff it and have the rice soak up all that turkey goodness?

The roasted turkey is a glistening golden colour and the crunchy sticky rice bits are yum!
Making the gravy. Turkey neck, carrots, onions and that package of turkey innards (which I always pull out at the end before blending the gravy for a smooth consistency) and all the drippings from the roasting pan.  Let me know if you need this GF recipe.  I'm just too lazy from the turkey meal to post it right now.

Roasted butternut squash
Brussel sprouts and shallots with shitake.  Okay, I'll admit I soaked too many mushrooms.  This is why they're in this dish.  Truth be told, they were pretty good but I probably won't add mushrooms again because no one seems to like shitake mushrooms in my house.
Soirette Macarons for dessert: Fleur de lis, Earl Grey Cassis, Apple Pie, Chai, Chocolate and Lavender. 
The best part of the entire day was the fact that my daughters were able to help me with the preparation of the meal.  Bebe, the 10 yo peeled potatoes and carrots, made tutti fruit jello for dessert and prepared lemonade.  Bib, the 6 yo, washed brussels sprouts, potatoes and carrots.  She was in charge of peeling the onions and was official gravy taster.  Both helped wash the dirty prep bowls and set the table too.

To top it all off, after dessert, both of them did a traditional Tea Ceremony for the family.  It was so cool.  They even counted the seconds for each infusion so the tea didn't get bitter.

The best part of a turkey feast is the Turkey leftovers! The kiddies lunchbox next day:  Mommy and Baby Elephant shaped Turkey Sandwiches and persimmon chunks. Oyah... that's one lonely seedless Celebration grape!


CAKEBRAIN'S GLUTEN FREE STICKY RICE STUFFING
4 cups sticky rice (also known as glutinous or sweet rice).  Glutinous rice doesn't contain gluten!
8 dried Chinese shitake mushrooms (4 if you don't like 'em so much)
4 Chinese sausage, diced
2 Tablespoons oil
1 Tablespoon grated fresh ginger
4 garlic cloves, finely minced
1/3 cup Chinese rice wine (or dry sherry)
2 Tablespoons Gluten Free Soy Sauce (or tamari)
1 teaspoon sea salt
2 teaspoons roasted sesame oil
1 teaspoon ground white pepper
3 cups low sodium chicken broth
garnishes:  chopped scallions and/or chopped cilantro and/or fried shallots
optional add-ins:  1 cup roasted chestnuts; 1 can chopped water chestnuts, finely chopped carrots, celery or onion, chopped roasted duck, chopped cured Chinese meats

  1. The glutinous rice needs to be soaked overnight.  Do this at the same time you're brining your turkey and soaking your dried mushrooms
  2. Soak rice in cold water in a bowl, with about an inch more than enough to cover.  Let stand on the counter overnight
  3. Soak mushrooms in another large bowl of warm water.  Let stand on the counter overnight.
  4. The next morning, rinse the soaked rice in a sieve and drain.
  5. Heat oil in a large heavy saucepan or stock pot (I used my ceremic-lined cast iron Le Creuset) and stir try garlic and ginger for several minutes.
  6. Add diced sausage, mushrooms, any other optional add-ins and continue to stir for a few minutes.
  7. Add rice, wine, broth and all seasoning and bring to a boil.  Keep stirring to the bottom of the pot  and you will find that indeed the rice is sticky.
  8. Lower heat to a simmer and cover the pot.  Allow the pot to steam, undisturbed for 20 minutes.  Do not open the lid to look at it!
  9. After cooking, you can eat the rice or use it to stuff the turkey.  
  10. Stuff and roast per your usual technique.  
  11. If you're going to eat the stuffing without stuffing the turkey (why?) then stir to the bottom of the pot to fluff the rice and then put the lid back on for another 10 minutes to just sit.
  12. Fluff and serve sprinkling scallions, shallots, cilantro (unless you hate that sort of thing).  This goes very well with the gravy that I made.  yum. And it's excellent as a leftover.

Potato Sausage Crockpot Dinner

 Ingredients

4 medium potatoes, peeled and sliced (or I used a bag of baby Dutch potatoes)
2 medium onions, sliced into rings
1 pound kielbasa or Polish sausage (I used Turkey Sausage)
1 can cheddar cheese soup
1 can cream of celery soup
1 bag frozen peas

Directions
Slice onions, potatoes, and sausage. Spray crockpot with non-stick spray. Layer potatoes, onions, and sausage in crockpot. Cover with cheddar soup and top with cream of celery soup. Cook on high for about 4-5 hours. For the last thirty minutes, add frozen peas to cook.


All finished!
It's very hearty and delicious! Perfect for fall or winter.

WW points plus points is about 10, if made this way.

Italian Turkey Meatballs

 Ingredients
Lean ground turkey
1/4 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
dried parsley
1 egg
1 clove garlic, crushed
salt and pepper to taste
1 jar tomato sauce (or homemade sauce)

Directions
In a large pot, pour tomato sauce over medium heat. In a large bowl, combine turkey breadcrumbs, cheese, parsley, egg, garlic and salt and pepper. With your hands form meatballs and add to sauce. Cook for about 20 minutes or until cooked through. Serve with pasta or as a meatball sub.

1 cup brown rice
Extra Lean Ground Turkey
Diced Onions
Taco Seasoning
Black Beans
Corn
Rotel

First, prepare rice. I used boil-in-a-bag rice! Brown ground turkey with diced onions and taco seasoning. When meat is done, add beans, corn, and tomatoes to skillet. Combine until heated. Combine meat mixture with rice. Top with sour cream and taco sauce if desired.

13 points plus for the amount I used.

Turkey Sloppy Joes

 You will need:
1 lb Extra Lean Ground Turkey
1/4 cup Diced Onion
3/4 cups Ketchup
1/2 cup Water
Worcestershire Sauce, to taste
3 Tbs Brown Sugar
1 tsp minced garlic
1/4 tsp Prepared Mustard
1/8 tsp Red Pepper Flakes
1/4 tsp Ground Black Pepper
4 Buns or Sandwich Thins
 
Directions:
Cook ground turkey and onions over medium heat, until meat is no longer pink. Meanwhile, in a small bowl, combine next 8 ingredients. Pour over turkey and stir to combine. Simmer on low for 30 minutes, stirring occasionally. Serve on buns or sandwich thins.
For the ingredients I used, one Sloppy Joe was 7 WW points +.

Won-sagna (Mini Lasagna Cups)

First I have to give credit to here for the recipe. I just tweaked it.

I also have to give credit to my awesome hubby who called them won-sagna! ;)
 You will need:
1/2 lb Extra Lean Ground Turkey
1/4 cup diced onion (I used frozen onions.)
24 Won Ton wraps
Cooking Spray
Low Fat Cottage Cheese
Salt and Pepper
1 jar Tomato Sauce (I used Classico Tomato & Basil.)
Shredded Cheese (I used WW Mexican Style Blend.)

Preheat oven to 375. 

Brown turkey and diced onions in skillet on medium until done. Add tomato sauce to skillet and let simmer on low. 

Combine cottage cheese, salt and pepper in a bowl.

Spray muffin tin with cooking spray.
 Place 1 won ton wrapper in each cup.
 Put one spoonful of cottage cheese on top of each won ton wrap.
 Then, add a spoonful of tomato sauce and meat mixture. Sprinkle shredded cheese on top of that. Add another won ton wrapper.
 Repeat layering process. Cottage cheese, tomato sauce, and shredded cheese.
 Bake for 10-15 minutes. Let sit in pan for a few minutes before serving.
 Enjoy!
 These are SOOOOO good.
For 4 cups, it is 12 WW points +.

Pepperjack Salsa Turkey Burgers and Cuban Black Beans

 Pepperjack Salsa Turkey Burgers
 For two turkey burgers, you will need:
1/2 lb Extra Lean Ground Turkey
1/2 can Rotel (I used Mild.)
Taco Seasoning
1/4 cup bread crumbs
2 slices 2% Pepperjack cheese
2 Nature's Own Thin Buns

In a bowl, place ground turkey, Rotel, Taco Seasoning, and bread crumbs. Mix together. Form patties and cook until done. Top each patty with a slice of Pepperjack cheese and melt. Place on buns.

I served mine with sweet potato fries and Cuban black beans (recipe below).

For the ingredients I used, each burger was only 7 WW points plus!


Cuban Black Beans
1 can black beans
1/4 cup diced onions (I use frozen white onions. So easy!)
2 tbsp light sour cream

Place black beans and onions in a bowl and microwave for 3-5 minutes. Top with sour cream. Enjoy!

For 1/2 cup black beans and 1 tbsp light sour cream, it is 3 WW points plus.

WW Meal Ideas

I posted this on my personal blog, but I made this meal this weekend and it was so delicious.

Greek Salad with Greek turkey burger with cucumber dill sauce.

For the salad:
Spring Mix and Romaine lettuce
tomatoes
black olives
cucumbers
fat free feta cheese

For the dressing:
1 tbsp extra virgin olive oil
1/2 tbsp red wine vinegar
black pepper
garlic
fresh squeezed lemon juice

For the turkey burger:
4 oz extra lean ground turkey
1 tbsp fat free feta cheese
Worcestershire sauce (to taste)
ground cumin (to taste)
black pepper
garlic powder

Mix together and make patties, grill until done.

For the sauce, I use 1 tbsp Otria Cucumber Dill Feta Greek Yogurt Dip. Then, serve with one pita.


This meal is 13 WW points plus.


Taco Salad
This Azteca taco salad shell is only 6 points and it is so yummy!
I put lettuce, 4 oz ground turkey cooked with onions and taco seasoning, salsa, taco sauce, 1/2 cup WW Mexican style cheese, 1/2 cup black beans, and 3 tbsp light sour cream for 13 WW points plus.
These are two of my favorite meals and even my husband LOVES them! :)

Flatbread Pizza

 Ingredients

1/2 cup Light Ragu Tomato and Basil Sauce
1 tsp Olive Oil
12 slices Turkey Pepperoni
1/3 cup 2% shredded Mozzarella cheese
Artichokes
Onions
Or whatever toppings you'd like!

Preheat oven to 350.
Drizzle oil on flatbread and spread around. When oven is preheated, place flatbread directly on oven rack and bake for 7 minutes. Take out and top with toppings and bake for an additional 7 minutes.

Only 8 WW points for the whole thing!!! It was yummy and crispy, too!

Turkey and Black Bean Enchiladas

 Ingredients
1 lb extra lean ground turkey
15.5 can black beans, drained
4.5 oz can chopped green chiles
14.5 oz can diced tomatoes (I used Rotel instead of separate diced tomatoes and green chiles.)
2 cloves garlic
1/4 cup chopped onion
1/4 cup chopped cilantro
1-2 tsp cumin
salt
8 (6-inch) low carb whole wheat flour tortillas
1 cup WW Mexican Style cheese
Nonstick cooking spray
Enchilada Sauce (1/3 cup has 0 points)
 
Directions
In a large skillet brown the turkey and season with salt. When the turkey is browned, add onion, garlic, black beans, cilantro, green chiles, diced tomatoes, cumin and chili powder. Mix well and simmer on low, covered for 20 minutes. Remove lid and simmer an additional 5-10 minutes to reduce the liquid.

Preheat oven to 400 degrees. Spray a 13 by 9-inch glass baking dish with non-stick spray. Put 1/2 cup turkey mixture into each tortilla and roll it. Place on baking dish seam side down. Top with enchilada sauce and cheese. Cover with aluminum foil and bake in the oven on the middle rack for 20-25 minutes. Top with low fat sour cream, cilantro or scallions if you wish.
For two enchiladas, 11 WW points. With 3 tbsp of light sour cream, 13 points total!

Zesty Turkey Tostadas

Ingredients
1/4 lb ground turkey
Frozen chopped onions
4 Mission EXTRA THIN yellow corn tortillas
Taco Seasoning
Rotel
2/3 cup Weight Watchers Mexican Shredded Cheese
Taco Sauce
3 tbsp Light Sour Cream
Shredded Lettuce
1/2 cup refried beans

Preheat oven to 400 degrees.
Cook ground turkey and onions in skillet. Add taco seasoning. 
Place tortillas directly on oven rack and bake for 5 minutes.
Top tortillas with refried beans, turkey, cheese, rotel, taco sauce, lettuce, and sour cream.

You can have all of this for 14 WW points! The EXTRA THIN tortillas are the key, though! They have 1 point per tortilla and are SOOOOO good! We've had this meal 3 times so far! LOVE it.

Turkey Enchilada Pie

 Ingredients:
1 spray cooking spray
3/4 pound uncooked ground turkey
1 medium onion, chopped
1 tsp chili powder
3 tbsp all purpose flour
1 cup fat free milk
1 can rotel
1/2 tsp cumin
10 tbsp low fat shredded cheese

Directions
Pre-heat oven to 350. In skillet, cook turkey, onion, and chili powder until cook through. Set aside. In same skillet, add flour. Gradually add milk and bring to a boil. Reduce heat to medium and simmer until thickened, about 2 minutes. Add turkey and cumin to flour mixture.

Wrap tortillas in damp paper towel and heat in microwave for 30 seconds. Place 1 tortilla in the bottom of a pie plate. Add 1/3 cup of turkey mixture on top of tortilla. Add 1/3 of the can of rotel and then 4 tbsp of cheese. Repeat again and top last tortilla with 2 tbsp of cheese. Cover pie plate with aluminum foil and bake for 15 minutes. Cut into 6 wedges.
1 serving is 5 WW points.

Greek Turkey Burger w/ Tzatziki Sauce

Ingredients:
Tzatziki Sauce:
- 1 container (6 oz) Greek Fat Free plain yogurt (They were out of Greek, so I just used plain nonfat yogurt.)
- 1/4 cup chopped cucumber
- 3 tablespoons chopped red onion
- 1 tablespoon chopped fresh dill weed
- 2 teaspoons fresh lemon juice
- 2 garlic cloves, minced
- ¼ tsp salt

Burgers:
- 1 lb lean ground turkey
- 1 cup crumbled fat free feta cheese (4 oz)
- 1/3 cup chopped red onion
- 1 tablespoon chopped fresh dill weed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 garlic cloves, minced
- 4 EarthGrains Whole Wheat Thin Buns
- 1 medium tomato, thinly sliced
- fresh lettuce leaves

Directions:
In small bowl, mix 1/2 cup yogurt and remaining sauce ingredients; refrigerate until serving. Heat gas or charcoal grill. In medium bowl, mix all burger ingredients and remaining yogurt. Shape mixture into 4 patties, about 1/2 inch thick.
Place patties on grill over medium heat. Cover grill; cook 8 to 10 minutes, turning after 5 minutes, until thermometer inserted in center of patties reads 160°F. Place burgers in buns with tomato slices and sauce.
If you choose to broil your burgers instead, broil patties with tops about 6 inches from heat 4 minutes; turn patties. Cook 6 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F.
Place a patty on one of the sandwich thins, top with 1 tbsp of Tzatziki sauce, a few tomato slices and a few fresh lettuce leaves.

This is another awesome Weight Watchers recipe that doesn't taste like it! Tastes like something you'd get at a yummy Greek restaurant.
Entire recipe makes 4 burgers
Serving size is 1 Greek Turkey burger with bun, 1 tbsp Tzatziki sauce and lettuce/tomato
Each serving = 4 Point Total

Cheesy Turkey Meatloaf and Spinach Salad

Ingredients
2 pounds ground turkey
2 eggs
1 cup milk
1 cup Italian bread crumbs
1 cup cheese (I used shredded cheddar and monterey jack)
1 teaspoon salt
1/4 teaspoon pepper
1/4 minced onions
1/2 cup ketchup

Directions
Preheat oven to 400 degrees.

In a bowl, combine turkey, eggs, milk, bread crumbs, onions. Fold in cheese. Season with salt and pepper. Transfer to greased loaf pan. Top with ketchup. Bake for 45 min-1 hour.
