Cake Decorating Classes for Fall 2012

Now, I know many of you don't live in the Twin Cities of Minnesota. But some of you do.
I would love to meet you and have you join me in a cake decorating class! I'm offering cake decorating classes in five community education locations around Minneapolis and St. Paul this fall, as well as my regular classes at the JoAnn store in Edina.

I have three opportunities to learn the Cake Decorating Basics:
- Thursdays, Sept. 20 & 27, 6-8:30pm:
Stillwater Area High School
 
- Saturdays, Sept. 22 & 29, 10am-12:30pm:
Henry Sibley High School (West St. Paul)
 
- Mondays, Oct. 1 & 8, 6-8:30pm:
White Bear Lake South Campus

If you're already good at icing cakes smoothly, holding a piping bag correctly, and making some basic decorations, maybe you'd like to join me for a "beyond the basics" Cake Decorating 201 class.
- Mondays, Nov. 2 & 12, 6-8:30pm:
White Bear Lake South Campus
 
- Thursdays, Nov. 8 & 13, 6pm-8:30pm:
Stillwater Area High School
 
- Saturdays, Nov. 10 & 17, 10am-12:30pm:

I'm also doing a class focusing on actually baking the cake, and getting it out of the pan without sticking, reducing crumbs, and even how to make cake mixes better.

For more seasonal classes, I have a fondant class, one with fall leaves, and in the December one, we will make a Holly wreath on the cake (with fondant).

For Halloween, we will make cake pops - witches, jack-o-lanterns, eyeballs, mummies.

And, it's a little early to think about the Holidays (unless you're my friend, Lisa, who already has all of her Christmas gifts wrapped)... but I will host three Family Gingerbread House workshops in December.

Cake Decorating Should Not Be Intimidating

I hear so often from students, friends, even my mother-in-law...
"I was intimidated by..." fondant, swiss meringue buttercream, ganache, making cake pops... "so I never tried it."

Don't be intimidated! I know, easy for me to say, I do this every week. (Definitely not every day.) But you have to try. Most of the time, you'll be surprised by how great things turn out.

Here's the truth:
- It always looks better to everyone else than you think it does!
- You have to mess it up in every way before you get it "just right."
- You'll never get it right if you never try!

Did You See?!

Remember this cake?!
My husband's birthday cake... the one I dubbed "The Most Ridiculous Chocolate Cake Ever?!" The one I gave him tons of grief about making. The one I slaved over for more hours than I care to admit? The one that combined five. different. recipes. (when you count the crust and the whipped cream).

Turns out it was a pretty okay thing that I made that cake. Because that cake led to this:
The St. Paul Pioneer Press has published the entire recipe and photos in today's Eat section. I'm pretty excited. It's my first time having a cake recipe published anywhere other than on this blog.

If this is your first time visiting my blog, thanks for checking me out. Not everything I do is as ridiculous as that cake! (I'd say almost nothing I do is as ridiculous as that cake.)

Ten Commandments of Cake Decorating

1. Thou shall not lick thy fingers or spatula.
2. Thou shall not suck icing from thy tips.
3. Thou shall not be afraid to ask a question.
4. Thou shall not make negative comments to others.
5. Thou shall listen, watch and learn before practicing.
6. Thou shall not over-fill icing bags.
7. Thou shall not wipe hands on clothes or others.
8. Thou shall always eat thy mistakes.
9. Thou shall always take pictures of all projects.
10. Thou shall remember to have FUN while we learn!

These are my Ten Commandments for the cake decorating classes, workshops & parties I teach.
Sometimes students follow them... sometimes they do not.

Fondant Snowflake Cake

Isn't it so peaceful, this sparkly little snowflake cake? It's what a snowy day is supposed to look like.

If you want to make this cake with me, I will be teaching classes at a few community education locations around the Twin Cities that will teach you how to cover a cake with fondant and decorate it like this. A perfect wintertime activity with a few friends! (See below for class information.)

If you're ready to go it alone...

What You Need:
8" round cake baked & cooled
2-3 cups icing
Spatula
Approx. 20-24 oz. white fondant*
Wilton Pearl Dust (white, silver or blue)
Blue Gel Coloring
Clear Vanilla Extract
Rolling Pin
Vegetable Shortening (to grease rolling surface)
Roll & Cut Mat or Parchment Paper for rolling fondant
Food-Safe Paintbrush
Snowflake Cookie Cutters

KEEP YOUR TONGUE IN YOUR MOUTH!

Having taught more than 300 students in my cake decorating classes and workshops, I have seen it all when it comes to finger licking, spatula licking, icing tip licking... you name it. So... I just feel the need to say it. STOP LICKING THINGS, PEOPLE!

*This scene actually was okay because the pan licked there was done for the day... and this adorable guy was only 2-years-old.

Fall Leaves Fondant Classes

Interested in learning about fondant? I will be teaching classes about how to make this very cake at four community education locations around the Twin Cities this fall. Click the links below to access the websites and register for the classes.

Thursday, Nov. 3 at 6:00pm: Eagle View Elementary School - Elko/New Market

Wednesday, Nov. 9 at 6:00pm: White Bear Lake High School- South Campus

Wednesday, Nov. 16 at 6:00pm: South St. Paul High School

Thursday, Nov. 17 at 6:00pm: John Glenn Middle School - Maplewood

Each location has a different pricing structure. Some include supplies in the tuition cost, some charge a lower tuition, but you have to pay for supplies. At each location, you'll bring a cake and icing (for some you need to bring a rolling pin), and I will provide the fondant and coloring, etc. Any questions, please ask!!

Halloween Cupcakes

Grass, Bees & Ladybugs Cupcakes

These cupcakes are the most popular design for the cake decorating parties and workshops I do. The techniques are all simple, and even young kids can make these look cute and fun. The hardest part is coloring all of that icing! (You could always use the tubes of colored icing, though, if you want.)
