I like to start the school year off right... that means, for me, that I send in
bribes gifts to my boys' teachers. This year, I tried these Cinnamon-Apple flavored cut-out cookies.
What You Need:For the Cookies:3 cups all-purpose flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1 cup (2 sticks) unsalted butter (at room temperature)
3/4 cup packed brown sugar
1 large egg (at room temperature)
3 Tbsp. apple juice concentrate (defrosted)
For the icing1 lb. powdered sugar (approx. 4 cups)
3 Tbsp. meringue powder
1/4 cup water
3 Tbsp. apple juice concentrate

It's hard to believe that in some parts of the country, it's almost time for back-to-school. We still have a good month of summertime ahead of us. But I thought I'd share some of my past back-to-school or teacher ideas for those of you whose summer is coming to an end.

Today was our official last day of school for the year. My guys are going to be first graders! Seems impossible. I wanted to make some cookies to thank the teachers, but I was running
really short on time this week.
So, I went the Kindergarten way out. I baked some simple round cookies, used
Food Writer edible ink markers to draw simple pictures on them, then used red icing to "cross out" the school-related things that they would no longer deal with over the summer... and green icing to circle the things they'd welcome.
I did some personalization. The whistling lips were for the teachers who have my one guy who cannot. stop. whistling. ever.
And the highlight... was the bloody tooth. Kindergarten teachers deal with a lot of lost teeth... and two of them do not like teeth at all!
*Note: My original idea was to do cookies based on the Alice Cooper song, 'School's Out.' Everyone told me it was too obscure and the teachers wouldn't know what I was talking about. Ha! The teacher opened the cookies, and immediately started singing the song. Congratulations, Graduate! These Chocolate Graduation Hat Cookies are the perfect gift for a special grad or a great centerpiece for a graduation party.
What You Need:Chocolate Roll-Out Cookie Dough (one batch makes about 12-15 hats)
Royal Icing*
Fruit-Flavored Tootsie Rolls or Starburst
Round Cutter (or glass)
Ruler
Small round cutter (I used icing tip #12)
*I added 2 Tbsp. Cocoa Powder to a
full recipe of Royal Icing for these. You only need a tiny bit of icing, though. You would be fine to do a half recipe, or you may even consider melting some chocolate or
Candy Melts to use as your glue instead of the royal icing.

That's what we did at our house this weekend, gearing up for the big day.
What You Need:Vanilla Sugar Cookie Recipeor

this set.)

edible ink markers*Note: It took me a little more than one batch to get the 100 cookies plus the rectangles for the extra cookies. You may be able to eek out 100 from a single batch, but I recommend at least a 1 1/2 batch of either recipe, just so you have a few for the inevitable mess-ups along the way. Some simple cookies for you today... presented to a Kindergarten Student Teacher at my boys' school. She is leaving the class this week, and they had a little party to celebrate her.
I used my new
Chocolate Sugar Cookie Recipe for these... you know, because who doesn't like chocolate?
I tried to keep these really simple by making just three colors of
Royal Icing: red, blue and yellow. (I guess four, if you count white.) I skipped filling any of the cookies with blue, just to help the teachers avoid the blue-icing-mouth.

I'm just getting into the fall mood here, thanks to some unusually warm weather for the frozen tundra this time of year. So, a look back at some of my favorites from last year... and a couple from the last week, as well.

Yummy caramel apple cupcakes, perfect for fall. I absolutely love this cake with this icing, and in cupcake form, you get even more icing per bite! Perfect!
What You Need (for the cupcakes)1/2 cup (1 stick) unsalted butter (at room temperature)
1 1/2 cups packed light-brown sugar
3 medium apples, peeled (two grated, one diced)
1 tsp. vanilla extract
2 large eggs
2 cups all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. salt
What You Need (for the icing)1 cup sugar
1 1/4 cups (2 1/2 sticks) unsalted butter (at room temperature, divided)
1/2 cup heavy whipping cream (at room temperature)
4 egg whites
1 cup brown sugar
1 tsp. vanilla
Yield: 2 dozen cupcakes with enough icing to cover them all with tall swirls-- and maybe a little extra for snacking. Click Here to Read More>>

My babies start Kindergarten this week. I am so nervous about sending them off to big, scary elementary school! But, I'm sending them with a couple of these wrapped up for their teachers... that ought to grease the wheels in their favor, right??

I'm working on a few new ideas for back-to-school in the coming weeks, but here's a look back at what I did last year, if you're ahead of me in this game. (And yes, I realize in many parts of the country I already missed the boat on this, but we like to squeeze a few more weeks out of summer up here in the frozen tundra!)
Can I tell you that I cringe a little bit looking at these? The royal icing I used for these was before I got
my recipe just right, and I can tell these never dried completely. I was also not as good at taking the pictures... and I know I still have a lot to learn in that regard.
Hopefully, I will get some new ideas up and running by early next week!!

It's graduation season, so when I first tried making my
Homemade Peanut Butter Cups as Graduation Caps, I thought they were pretty tasty. Eating them, however, without making a total mess... not so easy.
Then, it occurred to me... Put them on a stick! And use different flavors of filling. So, when I paid a visit to my old friends at the
local TV station, that's exactly what I did.
But I didn't feel like I got a chance to fully explain it all, so this post is a better explanation (hopefully).
What You Need:12 oz. bag of Chocolate Candy Melts or Chocolate Chips*
Lollipop Sticks
Mini-muffin pan
Mini-cupcake liners
Food-safe paintbrush
Colored Tootsie Rolls (Buy in bulk if you want a specific color. I wanted yellow and the bag had
one yellow one. Just one. But you could also use Starburst candy or licorice ropes.)
M&Ms
Filling:
- Marshmallow Cream & Crushed Graham Crackers

Homemade Peanut Butter Cup Filling-
Cooled Chocolate Ganache-
whatever else you can dream up! Icing? Fruit? etc...*Note: I use a combination of Wilton's Light Cocoa and Dark Cocoa Candy Melts. If you use chocolate chips, you will need to either temper the chocolate, or try to keep the treats refrigerated. You can also use any other color of Candy Melts to match with your school's colors. I made them with a batch of my
Homemade Peanut Butter Cups and some chocolate squares.
What You Need:Homemade Peanut Butter Cups (or Mini Reece's Peanut Butter Cups)
